Sophie Bakes: Nutella-Peanut Butter “Cookies”

“Cookies” because it was originally a recipe for cookies – but then…well, you’ll see why by the end of this post.

So, just like last time, I was inspired by a YouTube video to bake! I was craving for some cookies and ended up doing Gemma Stafford’s 3-Ingredient Cookie recipe! Assessing the ingredients I have in the kitchen, I decided to make some peanut butter cookies. The recipe is very simple, and as the title suggests, it only requires three ingredients!

Unfortunately, I lacked peanut butter and decided to substitute half of it with Nutella. I combined one cup of peanut butter + Nutella, 1 cup of white sugar, and 1 egg into a bowl and combined them all together (1:1:1 ratio).

Afterward, I prepared a “cookie sheet” and asked my 6-year old sister to drop the cookies on top.

I literally turned away for a minute or so and my sister poured the batter on the cookie sheet – thus, it became a brownie.

See? Oh well, ha-ha!

I did the best I could and cut it into little pieces, but no one believes me when I said that it really cookies.

It surprisingly tasted really good! I would recommend this to anyone who wants to make a quick treat to satisfy their cravings.

Bienvenue aux Philippines! (Welcome to the Philippines!)

Last week (October 6 – 9, 2016), my good friend Tiffany visited the Philippines! (If you don’t remember her – I mentioned her in a few of my previous blog posts – here is one of them! I met her when I was doing my exchange program in Japan!) We were so excited – and after weeks of planning, this is what we did while she was here (in my perspective)!

October 6, 2016 (Thursday):

October 7, 2016 (Friday):

On her first “official” whole day here, we went museum hopping! First, we attempted to go to the school museum (long story):

Japan 2k15 – Week 3 (April 18 – April 24)

I know, I know. I’m about two weeks late for this post! There’s just so much going on simultaneously – mostly school work and chores; but I finally had the time to sit down and re-tell my week 3 (here’s to hoping that memory will serve me right)!

Day 1: April 18

Today marks the first “week-sary” of going to Sophia University! Even if we literally started just a week ago, the workload is already pretty heavy. In Japanese classes, we have exams every day so studying and memorizing grammar rules and words and such take time. I went straight to the dorm after classes.

By the way, may I introduce you to the best cookie ever (sold in Japan / Japanese stores in the Philippines) – that’s manufactured, of course (nothing beats a homemade cookie!):

Country Ma’am Chocolate Chip Cookies!

Gosh, these cookies are just perfect. Not too sweet, very chewy, moist, with the right amount of delicious chocolate in them. I’m addicted. Help.

I finally took some time to try the KFC here in Japan and:

It’s pretty much amazing. The chicken is so good – so tender and just the right amount. The homemade biscuits came with maple syrup and the coleslaw is so good! Even if it didn’t have any rice, this meal made me so full. I had such a hard time finishing it. Wow.

Day 2: April 19

I literally didn’t sleep a wink today (well, tonight). I was too busy studying and reading for classes! This is my first all-nighter (in my collegiate life, that is). Wow.

I didn’t have time to cook, so I bought something from the convenience store:

I’m Back + Color Manila Run 2k16

I know, I know.

It’s been almost a month (or even longer, I think) since I’ve last updated BUT I do have very good reasons for why I’ve not been as active! First of all, school. I’ve been juggling my school work, org work, and other duties altogether. Second, I’m preparing for something amazing that’s happening next month (which I will reveal very soon)! Lastly, finals week (for me, at least) is coming up and I’ve been incredibly busy.

The reason why I decided to post now, though? I’ve missed writing for myself — and actually just finished watching a movie with one of my best friends, Nicole; it’s called Stuck in Love and it was released 2012. It’s easily one of my new favorite movies because the protagonists are writers so it pretty much inspired me to take a break and write again!

Before I start talking about the second part of the blog, which you can already tell from the title (hint: Color Manila Run), I would just like to share my recap from February!

Anywho, on to the second part of the blog post – Color Manila Run!

Earlier this month, on the 6th of March, my best friend Courtney and I went to Color Manila Run for the first time! Imagine this: colored powder, awesome music, running / walking, obstacle courses, and lots of laughs!

The night before, she slept over at my house (but we didn’t sleep oops) where we caught up and played loads of board games and card games (she studies in a different university). We left my house at 3 in the morning (!!) to make it to Mall of Asia by 4 in the morning, which was the call time. What surprised us was that there were so many people already at wee hours in the morning (also that from my house in Valenzuela City to Pasay City – it took around 30 to 40 minutes only)! While waiting for the fun run to start, we went around the booths and hoarded on free samples and freebies (most of them were sun screen, which I was happy about since two of my favorite brands – Daylong and Biorè were there)!
